🌮 Oven-Baked Chicken Flautas

Serves: 4–6

Total Time: ~35 minutes

Crispy, golden, and packed with flavor — these flautas skip the fryer but keep all the crunch. They’re brushed (or sprayed) with oil before baking, giving you that perfect crispy texture without the mess. Serve them with salsa, sour cream, or guacamole for dipping!

🧂 Ingredients

  • 2 cups shredded cooked chicken (rotisserie works great)

  • ½ cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)

  • ¼ cup salsa or enchilada sauce

  • 1 tsp taco seasoning or a pinch each of cumin, chili powder, and garlic powder

  • 8–10 small flour or corn tortillas

  • Cooking spray or light olive oil for crisping

  • Optional: chopped onions, jalapeños, or cilantro for extra flavor

👩‍🍳 Directions

🔹 1. Preheat & Prep

Preheat oven to 425°F (220°C).Line a baking sheet with parchment or a silicone mat.

🔹 2. Make the Filling

In a medium bowl, combine:

  • Shredded chicken

  • Cheese

  • Salsa or enchilada sauce

  • Seasoning (and any optional add-ins)

Mix until everything is evenly coated.

🔹 3. Roll the Flautas

  1. Warm tortillas slightly in the microwave (about 15 seconds) to make them flexible.

  2. Spoon 2–3 tablespoons of filling near one edge of each tortilla.

  3. Roll tightly and place seam-side down on the baking sheet.

🔹 4. Crisp Them Up

  1. Lightly spray or brush the tops with cooking oil.

  2. Sprinkle a little taco seasoning or paprika on top for color (optional).

  3. Bake for 18–22 minutes, flipping halfway through if you want even browning.

  4. They’re done when golden brown and crisp on the edges.

🔹 5. Serve

Serve hot with:

  • Sour cream or Greek yogurt

  • Guacamole

  • Salsa or hot sauce
